Readers (all 4 of you), if you’re wondering why I’ve been absent for the past 3 weeks, it’s because I’ve been on HOLIDAYS! Yes, that does require ALL CAPS.

Veggie Bagel

Mr has a taste of home

Along with peanut butter cups, cheeseburgers and Ben & Jerry’s ice-cream, bagels are one of those quintessentially American foods. Thus it was surprising to find all sorts of bagels for sale at Bean & Grain in the Fyshwick Markets- blueberry, onion, wholemeal, choc chip… Mr S confirmed that the ‘Everything Bagel’ did indeed taste authentically like bagels from his homeland. Of course, being American, it had to be washed down with a jumbo sized Coca-Cola.

In keeping with my new effort to make the most of living in a shoebox-sized apartment, I started an organic vegetable garden on our balcony. 3 hours and 12 bags of compost later… It’s done!!

Oh, ANU Food Co-op, how have I only just discovered you after 9 months in Canberra?? My friend E and I took part in a vegan cooking class at the Food Co-op today. On the menu: Quinoa Eggplant Fritters, Spicy Vegetable Curry with Crispy Tofu Strips and Brown Rice, and an incredible Vegan Strawberry Cheesecake.

A vibrant Green Monster

Mmmm mmm mmm! Blended up my first ever Green Monster this Sunday afternoon (inspired by the wonderful blog Oh She Glows). Just blend up the following healthy ingredients until nice and smooth:

1 cup almond milk
Handful English spinach
1 tbsp black chia seeds
1 tbsp natural peanut butter
1 frozen + peeled banana
a few ice cubes

—> Don’t worry about the disturbing green colour (Mr S thought I was trying to poison him) - I promise it tastes great!!
